Abstract

This  paper  studies  the  performance  standards  of  hygiene  and  the  green  butchers  inBethlehem between the years 1899 to 1908. Through the agency of the City Hall and the practice ofbeautifying the city, sought to understand the discourses of hygiene propagated in the documents andthe alternatives of market control of the meat through the agency of the marchers who transgressed thecode of position effect at the time. At that time it was noticed that the press Para acted as spokesmanfor the rights of the population, especially in defense of the regular supply, quality and low prices ofmeat, through the publication of the dramas of everyday life in this population, usually within the firstpages or columns of prominence, giving visibility to the problem of supply of meat, according to theirinterests.
